My guess is that it is "Latter Day Saints", i.e., Mormons, assuming BYU
is Brigham Young University.

An additional note: if I remember correctly, for many years BYU has
placed near the top of the MLA's lists of institutions which, in one way
or another, have limited their faculty members' rights to academic
freedom. Potential applicants, take note.

It means that Brigham Young University follows all USA federal
guidelines that prohibit discrimination based on race, gender, etc. in
hiring, but that although an applicant of any creed will be considered,
a member of the Church of Jesus Christ of Latter-Day Saints-LDS, or
Mormon-will be preferred.

Brigham Young University .... Latter Day Saints applicants -- that is
the proper name for the Mormon church.

If you meant why aren't "equal op emp" and "LDS preference" mutually
exclusive, ya got me there. The only way you can circumvent the Title
VII requirements usually is if you can show why the exclusion/preference
involves a BFOQ-bona fide occupational qualification. This school is
formally affiliated with the Mormon Church, though, isn't it? Maybe
that's why they can do this.
