Subject: Samphire
For fans of King Lear, and Heywood's Rape of Lucrece for that matter, I
have found this recipe for Samphire.
To Pickle Samphire
Strew a little salt
in the bottom of a jar
& than put in a little
Fresh gathered Samphire
& so till the jar is full.
Boil sufficient Vinegar
to cover it & pour it in boiling.
Cover the jar with a plate
& let it remain 2 days.
Then pour off the Vinegar
& boil it again. Pour on
the Samphire, boiling as before
& let it stand 2 more days.
Pour off the Vinegar
& boil the third time as before.
Let it remain till cold,
then tie it down.
