According to my dictionary, "adieu" has been considered English since
Middle English times, derived from old French.  But why the heck isn't
he speaking Danish???

According to the Works of the Bard search engine, "adieu" appears 102
times in Shakespeare.

Hamlet's father's ghost is not speaking French so much as using a French
word that had been borrowed into English.
