Osnat Gad's "Wedding Rings" is in print and available at Amazon and
other sites. It contains a highly readable account of the history,
lore, and customs of wedding and betrothal rings back to prehistory.
In the interest of full disclosure, the author is my wife.

The engagement ring is of Roman origin. The wedding ring of Egyptian.
The ring symbolized eternal love and the placement on the third finger
was from the belief that a vein ran from there to the heart.
