For productions in the UK you could use the wonderful data on Touchstone:
http://www.touchstone.bham.ac.uk/performance.html
This covers current and forthcoming UK productions but also information
for 1996 onwards archived. No simple numbers - you'd have to do your own
counting - but for the UK it is very impressive in its coverage
(weakest, inevitably, on non-professional work).
Of course world-wide data is covered as comprehensively as one could
reasonably wish by Jim Harner's brilliant achievements in the World
Shakespeare Bibliography online (http://www.worldshakesbib.org/) -
productions, books, articles, reviews, etc.
