There is an interesting essay in John Sutherland and Cedric Watts' Henry
V, War Criminal? (Oxford, 2000), 'Is Portia a virgin at the end of the
play - and will she stay one?' which investigates all the circumstances
of the marriage of Portia and Bassanio.
