Hippolyta and Theseus speak of the sport; Hippolyta fondly remembers
being with Hercules and Cadmus once during this sport - they used
"Hounds of Sparta"; Theseus himself breeds the Spartan dogs for the sport.

One source albeit fictional would be NOTHING LIKE THE SUN, Anthony
Burgess' book about Shakespeare, which describes the atmosphere around
the Globe, as I recall, as saturated with the smell of blood and offal
from the blood sports adjacent to it. Probably know this already, but
all those streets named little bear lane etc around the Globe reflect
the sport. I'm sure you can go to the web on this, but I seem to
remember there have been several books about the Elizabethan underground
and gambling practices. Best. HR Greenberg MD ENDIT

Check the Sidney Lee essay on bear and bull-baiting and cock-fighting in
Shakespeare's England, 2. 428-36.

As I remember, there's a chapter on bearbaiting in Shakespeare's Clown :
Actor and Text in the Elizabethan Playhouse by David Wiles
